Instructions
- Heat the oven to 200 C conventional, 180 C fan (about 400 F). Brush the eight pepper halves with 1 teaspoon of the measured oil and set cut side up in a roasting dish.
- Roast for 15-20 minutes, until the peppers begin to soften. Larger or thicker peppers may need longer.
- Meanwhile, warm the remaining oil in a large frying pan. Cook the onion and sliced extra pepper for about 5 minutes. Add the cauliflower rice, cumin, paprika and chilli powder. Cook for another 4-5 minutes, stirring to release excess moisture.
